WHAT'S COOKIN' GOOD LOOKIN'? - YUMMY LINKY

Mmmmmmmmmm . . . somethin' smells good around here!  It might not taste all that good when we finally get down to it, but I am stepping out of my comfort zone this evening by tryin' a new recipe.  This is perfect timing as my bloggin' buddy, Susan, over at T.G.I.F (Thank God It's First Grade) is hosting her VERY FIRST linky party!  It's called . . .

Let me begin by saying that I am Gluten Free and Dairy Free, but not by choice mind you.  Yes, please feel sorry for me.  My meals pretty much STINK unless I find a rockin' recipe - I am not one to try things on my own.  However, this diet keeps my newly repaired colon in check (so gross), so I will keep my gripin' to a minimum!!!!  I have tried lots of Paleo Recipes from the book below and I haven't had a bad one yet - you should look into it!!!  You don't have to be GF to enjoy the food . . . PROMISE.  My hubs (one of those lucky "iron gut" guys) has really loved the dishes from this book too!


Tonight we are trying, Puerto Rican Beef.  




Here is a little pictorial walk through my cooking adventure tonight.  **PLEASE NOTE:  I have a VERY grouchy gut so I omitted the saffron threads (well, that was more because I am kinda cheap) and I had to cut the onions WAY down (by more than 2/3).

All in all, it was pretty good.  I think my hesitation to use more onion and saffron hurt us a bit this evening.  It just needed a little more "kick" and these ingredients would have given this ditty just what it needed.  We will be trying this again soon . . . and we will follow the recipe to a tee.  Did you like the sweet patio shot???  We ate outside so we could enjoy the evening air and have a nice view of our pretty yard :)

  3. This looks yummy. We are wheat, dairy, beef, and egg free here. Not by choice either.

    1. Whoa . . . there must be lots of fruits and veggies in your house. I typically can't eat beef either. My stomach typically goes on strike when it sees cow :) But, I just couldn't help myself last night! Hehehehehe :)

  4. I know how you feel. I have Celiac disease. I have been living without for almost 9 years now. I try to be super careful about everything I eat and I still get contaminated when we go out to eat. BOO! Plus, my husband and I are vegetarians {by choice.} Finding good recipes {that aren't salads} is hard to come by. We have recently introduced fish into our diets, but that's as far as we will go in the meat department. It is pretty amazing how good tofu can be with just the right seasoning. I'll have to check out your cookbook because we are always on the lookout for something - anything - different!

    1. I've heard Celiac is brutal. I have some friends with it. Although Everyday Paleo is definitely meat-based, there are some fun veggie and salad recipes in there. Also, I bet you could sub tofu in for some of the meat dishes! Going out to eat still breaks my heart . . . I just want a slice of pizza now and again :)

  9. Coming back to show you some blog <3. I don't know anything about gluten free but I do know that if you search pinterest you will be able to find a lot of ideas. My friend has to eat gluten free and she pins all kinds of meals and desserts on there!
