Let me begin by saying that I am Gluten Free and Dairy Free, but not by choice mind you. Yes, please feel sorry for me. My meals pretty much STINK unless I find a rockin' recipe - I am not one to try things on my own. However, this diet keeps my newly repaired colon in check (so gross), so I will keep my gripin' to a minimum!!!! I have tried lots of Paleo Recipes from the book below and I haven't had a bad one yet - you should look into it!!! You don't have to be GF to enjoy the food . . . PROMISE. My hubs (one of those lucky "iron gut" guys) has really loved the dishes from this book too!
Here is a little pictorial walk through my cooking adventure tonight. **PLEASE NOTE: I have a VERY grouchy gut so I omitted the saffron threads (well, that was more because I am kinda cheap) and I had to cut the onions WAY down (by more than 2/3).

All in all, it was pretty good. I think my hesitation to use more onion and saffron hurt us a bit this evening. It just needed a little more "kick" and these ingredients would have given this ditty just what it needed. We will be trying this again soon . . . and we will follow the recipe to a tee. Did you like the sweet patio shot??? We ate outside so we could enjoy the evening air and have a nice view of our pretty yard :)
